Chilli Soup for Chilly Weather

With the onset of colder weather among us, we are seeing more fall decorations, light-weight jackets in tow and cookbooks being scoured for soup recipes.  Here is super easy recipe for chili soup from that I love:

•    1 pound ground beef
•    1 cup chopped onion
•    ½ cup chopped green bell pepper
•    2 ½ TBsp chili
•    1 clove garlic, minced
•    1 bay leaf
•    ½ tsp ground cumin
•    4 tsp finely chopped jalapeno chile peppers
•    1 can (29 oz) diced tomatoes
•    1 can (15 oz) tomato sauce
•    1 can (16 oz) chili beans, undrained
•    Salt and pepper to taste


In large saucepan over medium high heat, combine ground beef, onion and bell peppers.  Saute for 5 minutes, or until beef is browned. Drain excess fat.  All chili powder, garlic, bay leaf, cumin, chile peppers, tomatoes, tomato sauce and salt and pepper.  Bring to a boil and reduce heat to low.  Cover and simmer for 1 ½ hours, stirring occasionally.  Stir in beans and heat through. Serve and enjoy!
